From Michelin Stars to Closed Doors

Some things just live up to the hype: The Sistine Chapel. Beyoncé. And the original noma. The iconic Copenhagen restaurant was a four-time winner of the title World’s Best Restaurant, it was awarded two Michelin stars and it even made eating bugs sexy.

And then, like an absolute baller, René Redzepi announced he was shutting it down.

Motivated to change things up, René and his team left noma behind to travel and learn from other parts of the world. They opened wildly successful noma pop-ups in Japan, Australia and Mexico, where they sourced and incorporated local ingredients (rice ice cream in Japan, crocodile fat in Australia, mussel michelada in Mexico).

Now fresh off that world tour, with new mindsets and inspirations, Rene is putting all they’ve learned into a brand new restaurant.

New noma

Set to open on February 15 in an impressive new space, the new noma will include a greenhouse and an urban farm—much like Dan Barber’s Blue Hill at Stone Barns in New York. While no pictures have been released (yes, it’s that exclusive), diners can expect to take in the view of a lake and soak up gorgeous natural light thanks to some artfully placed glass panelling that will make it feel like you’re outdoors.

And as for the menu? It’s going to be revolutionary.

Inspired by his work abroad and developed by René after spending months exploring Nordic destinations for the best food the region has to offer, the menu is going to be sharply (and deliciously) seasonal.

Those few diners lucky enough to be there for opening night will enjoy the new noma’s winter menu, which will celebrate the type of foods that are best during cold, winter months. (That means seafood. Lots and lots of yummy and unexpected seafood.)
